Here's one:

OneTrip is an iPhone-optimized web application (a simple shopping list). It's a single-page, no-reload JavaScript app. Your shopping list will be saved in a cookie, so it'll be available next time you visit the page.

I've read that something like that would be really easy for people to steal passwords from... so I'd hold off until there's a definite legit version, or you can get the code and host your own version.

Aren't there plenty of existing web-AIM services?

Here's two webapps I found recently, can't speak to their utility:

http://www.webologistdesign.com/phonedango/ - PhoneDango - look up movie listings

http://bravetrail.com/iphone/users/welcome - Bravetrail - mobile blogging community

Anyone have any apps they'd really like to see? I'm considering developing a few and am looking for some good ideas.

It doesn't seem like Apple is one to approach things that way..

www.macrumors.com
www.appleinsider.com/

But still:
http://www.apple.com/legal/trademark/appletmlist.html
http://www.apple.com/legal/trademark/guidelinesfor3rdparties.html

"Unauthorized Use of Apple Trademarks

1. Company, Product, or Service Name: You may not use or register, in whole or in part, Apple, iPod, iTunes, Macintosh, iMac, or any other Apple trademark, including Apple-owned graphic symbols, logos, icons, or an alteration thereof, as or as part of a company name, trade name, product name, or service name except as specifically noted in these guidelines.

3. Variations, Takeoffs or Abbreviations: You may not use an image of a real apple or other variation of the Apple logo for any purpose. Third parties cannot use a variation, phonetic equivalent, foreign language equivalent, takeoff, or abbreviation of an Apple trademark for any purpose. For example:

Not acceptable:   Appletree      Jackintosh      Apple Cart      PodMart

9. Domain Names: You may not use an identical or virtually identical Apple trademark as a second level domain name.

Not acceptable:    “imac.com”     “imacapple.com”     “imac-apple.com”     “podmart.com” "
