You can restore iTunes backups to your iPhone at any time. Follow these steps to choose a backup and sync the data to your iPhone.
- Connect the iPhone to the computer with a USB cable.
- Open iTunes (or Finder on Mac) and select your iPhone.
- If you have a new or erased iPhone, iTunes will prompt you to restore from backup.

1. Choose iTunes backup and scan it
When launching the program on your computer, choose "Recover from iTunes Backup File" option on the top, then you'll get the interface below. Choose the iTunes backup of your iPhone, if there are more than one, choose the latest one, and click "Start Scan".
2. Recover deleted iPhone data
When the scan is over, the whole backup content are extracted and also displayed.
3.You can preview them one by one. Then check those you want and click the "Recover" button to save them on your computer.

There are 3 options that you might be able to take advantage of:-
1. Call Att or verizon (whichever you use) and they might be able to help for a fee. Usually it will be a bit on the higher side.
2. If you have a backup of your iPhone, then open iTunes and connect your iPhone. Restore your iPhone to the previous backup. This is a free option but will erase all the current data from your iPhone and would back date it to the old data (its a like a time machine, so you go back in time and loose all the current info.) You also don't get the option to go back just for texts. Essentially, every single piece of info of your iPhone will get back dated including contacts, photos etc.
3. Get a backup recovery software which recovers the iPhone's data for you. I'd recommend Total Saver for the price and ease of use.
Hope this helps you

To restore iPhone data from iTunes backup, you have two options.
1. Recover data directly from iTunes.
2. To use the iPhone data recovery software to extract iTunes backup file.
Comparison of this two ways: by the first mode, you may lose some data that updated after the last sync; by the second mode, you won't be disturbed by this, moreover, you can scan and selectively restore your iPhone data.
