I've had an Apple ID for a really long time and my Apple ID was NOT an e-mail address. You MUST convert your Apple ID to an e-mail address before you can use this feature. This was driving me nuts and I couldn't figure out why I couldn't log into any of the sites. As soon as I did this, all worked fine. Go to http://appleid.apple.com and go to manage your Apple ID. Once you've logged in, there is an option to merge your Apple ID and your e-mail address. Once this step is complete your new Apple ID will be your e-mail address and then all of the steps that you outlined above works great.

A good lock screen + honesty will help.

"Find my iPhone" is a must, but it is always a good idea to set an explicit Lock Screen, with a phone number to reach you.

You can do it by creating an image from your PC or directly on your iPhone/iPad with apps like A+ Signature.
